With 16 years of experience behind the bar, Jes Farruggia has cultivated her career across the full spectrum of hospitality— from no-frills dive bars to fine dining institutions across the Chicago suburbs. She has built a loyal following through her private bourbon club and monthly bartending classes which she retired at the end of 2024.In early 2025, Jes relocated to Austin, Texas to further pursue her passion for whiskey. She now serves as the General Manager of the Tasting Room at Still Austin Whiskey Co., a distillery celebrated for its grain-to-glass approach and commitment to local flavor. Jes oversees all front-of-house operations, with a focus on hospitality, education, and menu development. She also curates weekly music programming, blending Austin’s vibrant live music culture with a world-class whiskey experience.Jes returns to Revelry for her second year, bringing a bold new perspective shaped by Texas terroir and community. Her cocktail style emphasizes clean ingredients, seasonal inspiration, and a strong sense of place —pulling from the rhythm of Austin, the creativity of local makers, and the depth of the whiskey she works with daily. She believes the best drinks start with connection— whether to people, ingredients, or the stories they tell.
