Pastry Chef Hailey Marciniak

Pastry Chef, The Gallery, The Peanut Gallery, CREAM Bake shop

Hailey inherited her passion for baking from her family. At a young age, she began cooking and baking with her grandmother. With guidance from her uncle, a baker with many years of experience in cake decorating.

Hailey is a graduate of Purdue University with a bachelors of arts in psychology. After graduation in 2011, Hailey took her grandmother’s advice and continue to follow her passion for pastry by enrolling in Le Cordon Bleu Chicago’s Patisserie and Baking Program.

 

While at Le Cordon Bleu, she worked for Sweet Ride, a mobile Cupcake Food Truck, as an Assistant Baker. She also worked for Sarah Levy’s bakery formally known in downtown Chicago as Sarah’s Pastries and Candies as a Baker.

 

Throughout the years, she has held positions such as, Bakery Manager, Event Coordinator, and Hospitality Manager, Currently Hailey is the Pastry Chef for the Cotton Duck Hospitality Group (The Gallery, Peanut Gallery, Lucky Duck, CREAM Bakeshop)

 

While working as the Pastry Chef/Chocolatier for a restaurant in Gurnee, IL. Hailey had the ability to travel to Ecuador, France, and Italy to research chocolate and continue to grow further into her pastry craft. Hailey’s dessert creations focus mainly on french techniques with a play on flavors and textures.

 

Hailey supports Plates of Hope. A non-profit organization benefiting today’s children for a better tomorrow. Hailey has been selected as their Pastry Chef for their yearly fundraising dinner.
